This has been my amazing dessert this week! Since I am off dairy, and all my loved cottage cheese desserts are out the window now…this tofu-based pie has my heart!
I was doubtful. Tofu in a dessert frankly sounds gross, lol...but after my girl brought this to a team retreat and I tried it… my mind is changed!
Ingredients 2 Tablespoons almond milk
One container of firm organic tofu, cubed
2 scoops of chocolate protein powder (Or two scoops of vanilla, and then add in 2-3tablespoons of cocoa)
2 large bananas, cut into chunks
1 tablespoon honey
1/2 cup peanut butter
Pie crust
3/4 cup almonds
3/4 cup oats
Blend in processor
Add in 2 tablespoons coconut sugar and 1 tablespoon coconut or avocado oil.
Bake at 375 for 15 min. Let cool.
Directions
1. Blend all the ingredients until smooth and pour into pie crust.
2. Refrigerate for at least one hour before serving.
3. Optional top with pecans and coconut whip and enjoy!
Makes 12 servings.
